Day or Night Denim

I've said this before and I'm sure I'll say it again.... I AM A COMFY BUT CUTE kinda girl! I LOVE, LOVE, LOVE a cute denim set, or the right pair of jeans because they can go with just about ANYTHING....literally! Denim pieces are normally very versatile which is another thing I love- but who doesn't! 

This past weekend my hubby and I went to a few gatherings and I FINALLY wore my denim jumpsuit I've had for a year now!!

This denim jumpsuit was the perfect fit for this past weekend. Light and not too heavy, stylish and most importantly... cute and comfy!

Energy Starts With Your Thoughts

Quick MOS (Moral of the story): When you focus on what you don't have, what you THINK is missing, what you want/need... believe it or not you're inviting negative energy into your space because your mind is constantly on "why" instead of focusing on the things you have, or the things you once prayed for that will keep your mind on "THANK YOU"!!!!

You know the saying, "the mind is a powerful thing to waste" right? Well, that's very true because our thoughts produce our actions and if your thinking negative..... how do you expect to produce positive results??? 

Think positive - Reap positive!!! Trust me!! If you don't wanna take my word for it just try it out and see if your vibe or energy changes!

Kicked Up "Boxed" Corn Muffins

If you like corn muffins then you'll LOVE these!! 

Now before we start, let me just say these muffins are NOT from scratch but just as good ....if not better (okay that may be stretching it but they are GOOD)!! I try not to cook these often because they're so heavy in carbs but depending on your carb intake (if you're even a carb counter), these muffins may not be a problem for you to indulge as often as you like. 

They're so easy to make and you only need 4 ingredient's!! 

Let's get started...



Ingredients: 1 box of Jiffy corn muffin mix, 2 eggs, 1 can of sweet cream style corn, 1 tablespoon of melted butter.


Box of Jiffy mix added to large mixing bowl.


Adding the cream style corn in.


Whole can of cream corn added.


Now add your 2 whole eggs.


Next, add the last ingredient: your 1 tablespoon of melted butter.


Mix all your ingredients together and it should look like this.


Spray/Butter up your muffin pan to prevent muffins from sticking. (I only have the 6 tin pan and this recipe makes 8-9 muffins).


Place mixture into your muffin pan. Set oven to 400 degrees and bake for about 15-20 minutes. The mixture will rise as it bakes so try not to fill quite to the top as your muffins will expand making them hard to remove.


Straight out of the oven after baking for approx. 17 minutes ...look at this beauty!! (I rubbed more butter on top- I know, I know....shameful)!!!! You can always opt for honey :)

These corn muffins are great for a "quick fix" when you don't have the time or energy to go from scratch! They go great with chili, ANY comfort meal or just a simple sweet fix!

It's Completely Okay... Hit That #Reset Button!!


And it's as simple as THAT!!! Wanna know why? Because this journey of LIFE didn't come with an instruction manual. We simply have to do and learn! And in this process of "doing as we learn", we WILL make a mistake or two, hell maybe three, four or a shit load more!! But, it's OKAY!!!! Don't panic at every little thing that didn't work out according to your plan. Just means you have to move on to plan B or learn how A went wrong, fix the errors and try it again! 

Prime example: MY BLOG!!!! As I type this, I'm #RESETTING!!! I had some setbacks and technical difficulties with my blog and had to take time off to reset, re-adjust, re-focus and most important...RE-START!!!! 

As long as you are taking the time to re-analyze your decisions and movements in YOUR life, no matter how many times or how long it takes...YOU'RE MOVING IN THE RIGHT DIRECTION!! 

So go ahead and hit that #RESET button on whatever it may be that needs some #RESETTING in your life right now.... goals, friendships, job responsibilities, relationship, savings, credit repair, exercise/diet regimen, etc.! 

DO IT TODAY!!! #RESET.... You owe it to YOU :)

No Rice "Fried Rice"

Yup, you read it right!!! "NO RICE - FRIED RICE"!!! I'm sure some of you are probably saying huh? What? How? Etc. so let me get right to it! 

I LOVE rice but because I'm trying to be more carb concious and just healthier overall, I've been researching healthy alternatives to the carbs I want to eliminate. With rice being one, I stumbled across "riced cauliflower"!! I love cauliflower many ways so figured what the heck, I'll give it a try as a rice dish.

My first time trying this riced cauliflower, I made shrimp fried rice and it was a complete winner!!! Take a look at my step by step instructions below if interested in making this.

Ingredients Used:
Organic Riced Cauliflower- found at Trader Joes)
3 Eggs
2 cloves of fresh garlic
1 pound of shrimp
1 onion 
Scallions (not pictured)
Blue Dragon Broccoli Stir Fry Sauce
First, rinse and peel your shrimp.
All peeled and cleaned.

Go ahead and chop up your onion and garlic cloves.
How much is totally to your liking!
Scramble your eggs and set aside.
Saute' your onions and garlic just until fragrant.
 (watch carefully- garlic can burn quick).
I used Coconut oil but, you can use whatever you like
i.e. butter, olive oil etc.
Add your Bag of riced cauliflower to the onions & garlic 
and saute' for approx. 5-10 minutes- just until moisture is absorbed.
While you cauliflower is cooking, start cooking your shrimp just until they're
no longer translucent.
I just used about 1 tablespoon of coconut oil but again,
use whatever you're comfortable with.
Once your cauliflower and shrimp are done, lower the heat and
add your shrimp to the cauliflower.
Almost done, add your scrambled eggs to the mix.
Here's the secret ingredient that gives it that asian flavor!
This can be found in the Asian isle at your grocery store.
Just simply drizzle it evenly throughout the pan
ensuring everything gets covered.
Here's where you add the Scallions and here's how it looks all mixed up....
All plated and ready to eat! Yummers :)

Hoisin Lettuce Boats For the Win

First and foremost... HAPPY GOOD FRIDAY!!!!!

On this beautiful first Friday of Spring I wanted to share a nice, light, colorful, fun and most importantly very easy meal! I absolutely LOVE recipes that have very minimal ingredients- I really do! One thing that I don't get are those recipe's that call for ingredients that your normal day to day market does NOT carry. Complete pain in the neck!! Especially if you're a beginner at cooking. 

Well, you wont be finding those complicated recipes here! No ma'am! lol! OK, back to it... I came across a similar recipe as this one but required too much that in my opinion wasn't even really necessary. So, you know what I did...tweaked it to fit my liking:)

Take a look below to see the step by step instructions for making these delicious and EASY "Hoisin Lettuce Boats"!!!

Ingredients Used:
Ground Turkey (Sorry! Moving too fast and forgot to include it in the pic) Romaine Hearts, Vidalia onion, 1 carrot, Cilantro (I didn't end up using the mango salsa because it taste GREAT without it)!!

Add seasoning of your choice and start browning your ground turkey. I only used garlic powder, onion powder and garlic sea salt.

While your ground turkey is browning, start chopping up your toppings. (I used a grater for the carrot). You can use whatever toppings you like i.e sliced mushrooms, water chestnuts, cheese etc. The options are endless! 

Ground turkey is fully cooked and ready to be drained!

Once your ground turkey is fully cooked and drained of fat, go ahead and add the star of the show...your hoisin sauce! Hoisin has a sweetness to it so add it slowly and taste as you add.

While your ground turkey and hoisin are getting to know each other, go ahead and rinse your romaine hearts and pat dry on both sides! Nobody likes wet lettuce - yuck!

OK, your ground turkey should have had a couple minutes for the hoisin to marinate the meat so, at this time you can start adding the meat mixture to your romaine lettuce boats and start topping! 

Finished product!!! Aren't they just so colorful and pretty? Not to mention DELICIOUS!!!!

When I tell you this recipe was LIFE and then some!!!!! I'm always trying to find good tasting but more healthy options and this is one that will go down in the books for hubby and I!!! It was so good!!! So good that I made it again the very next day! Yup, sure did-lol

7 Cardinal Rules For Life


We all need a little reminding at times on how to approach situations, or how to keep a positive mentality etc. and I think these "7 cardinal rules for life" are pretty amazing!

These are NOT my words. I've seen this floating around on social media and thought I'd share because I definitely agree!

  1. Make peace with your past- so it wont disturb your present or future.
  2. What other people think of you- is NONE of your business.
  3. Time heals almost everything- give it time.
  4. No one is in charge of your happiness- EXCEPT you.
  5. Don't compare your life to others- and don't judge them, you have NO idea what their journey is about.
  6. Stop thinking too much- it's alright not to know the answers. They will come to you when it's time which is usually when you least expect it.
  7. SMILE! You don't own all the problems in the world and the ones you do own.... some people wish that was the only worry they had. IT'S ALWAYS SOMEONE GOING THROUGH WORSE!!

I could elaborate on each one but, thought I'd leave it right there because as simple as they sound.... they are just as bold!
