No Rice "Fried Rice"

Yup, you read it right!!! "NO RICE - FRIED RICE"!!! I'm sure some of you are probably saying huh? What? How? Etc. so let me get right to it! 

I LOVE rice but because I'm trying to be more carb concious and just healthier overall, I've been researching healthy alternatives to the carbs I want to eliminate. With rice being one, I stumbled across "riced cauliflower"!! I love cauliflower many ways so figured what the heck, I'll give it a try as a rice dish.

My first time trying this riced cauliflower, I made shrimp fried rice and it was a complete winner!!! Take a look at my step by step instructions below if interested in making this.

Ingredients Used:
Organic Riced Cauliflower- found at Trader Joes)
3 Eggs
2 cloves of fresh garlic
1 pound of shrimp
1 onion 
Scallions (not pictured)
Blue Dragon Broccoli Stir Fry Sauce
First, rinse and peel your shrimp.
All peeled and cleaned.

Go ahead and chop up your onion and garlic cloves.
How much is totally to your liking!
Scramble your eggs and set aside.
Saute' your onions and garlic just until fragrant.
 (watch carefully- garlic can burn quick).
I used Coconut oil but, you can use whatever you like
i.e. butter, olive oil etc.
Add your Bag of riced cauliflower to the onions & garlic 
and saute' for approx. 5-10 minutes- just until moisture is absorbed.
While you cauliflower is cooking, start cooking your shrimp just until they're
no longer translucent.
I just used about 1 tablespoon of coconut oil but again,
use whatever you're comfortable with.
Once your cauliflower and shrimp are done, lower the heat and
add your shrimp to the cauliflower.
Almost done, add your scrambled eggs to the mix.
Here's the secret ingredient that gives it that asian flavor!
This can be found in the Asian isle at your grocery store.
Just simply drizzle it evenly throughout the pan
ensuring everything gets covered.
Here's where you add the Scallions and here's how it looks all mixed up....
All plated and ready to eat! Yummers :)
